I really would've liked it if this question was multiple choice. Too many great and varied games coming out it feels weird to only pick one.
Personally Im looking forward to BoTW2, Starfield, Stalker 2, Redfall, Kirby: Automata, HFW, Hogwards Legacy, GoW Ragnarok, Forspoken, Elden Ring and Bayonetta 3.

I also cant wait for Perfect Dark, Project Eve, FF16, Pragmata and Unknown 9 Awakening though these games probably wont make it next year.

TBH, If 4 of these games drop next year Ill have more than enough to play on top of the games released or coming this year.

Switch: Metroid Dread. I have developed such a love hate relationsship with this game. I feel so accomplished whenever I mamage to go further but I also havent rage quitted this much in my life I think.
Series S: Im starting Forgotten City this weekend. Really looking forward to it!
PS5: Death Stranding DC. This might be my favourite game of all time which is weird because its also a game I dont recommend to anybody.

Recently finished: The campaign in Back4Blood. A fun game but I dont see myself continue playing it.

@Xenomorph_79 Wu-Tang Clan is a rap group from the 90's, still active today. Their debut album Return to the 36 Chambers is considered a true hip-hop classic.

As for this arpg news. This sounds too good to be true. Day 1 for me. Wu-Tang is for the children!!

Switch: Metroid Dread, haven't rage quitted this much in a while.
Series S: Back4Blood, my favourite co-op. Having a lot of fun with this one.
PS5: Finally got my hands on one (wooo). I upgraded Death Stranding to Directors Cut and I love being back in that world.

I love it. Having a ton of fun with this game playing coop with my friends (or randoms if my friends can't play). Not sure how long I'll stick around after wrapping up the campaign but who knows. To me this is the kind of game I can just pick up, play some maps and put down again later down the line.

I played with random players last night and it was pure joy! Didnt meet any nasty players but if I do the mute button is right there and you can easily jump in and out of games if you want to change the people you play with. This will be my new addiction for sure. That is until Forza 5 drops. And Halo Infinite Drops... And Im already hooked on Flight Simulator. Fine. Back4Blood will be my fourth addiction. Wait. I forgot about Gears 5. Make that 5 addictions.

Switch: Super Mario Oddyssey. I recently picked this game up again (after not touching it since I played it during launch) and want to get those final moons I havent collected yet. This game is still great btw.
I might buy Metroid Dread as well. Haven't played any Metroid games before but I figured I might as well jump into the newest one, especially since it's gotten such great reviews and feedback from players.
Series S: About to wrap up the campaign in Gears 5 for a third and final time. And play some more Scarlet Nexus. Im really enjoying the combat and bonkers story.

Recently finished: Psychonauts 2. I really enjoyed this one, even though Im not a big fan of platformers.

Xbox: Halo Infinite Beta, game feels really good, cant wait for the campaign.
Scarlet Nexus, combat is awesome giving me the same vibes as Astral Chain and the NieR games kind of. Im only 2 chapters in but I can already tell the story is dumb. Still plan to play it all the way through.

Looking forward to: Back4Blood!

Series S: Halo 5 coop, Gears 5 coop, Flight Simulator landing challenges and The Outer Worlds. I fell off first time playing TOW but decided to give it another chance. So far so good.

Series S: Outriders, I only got one achievement left so Ill do that one before retiring the game. And Im not even an achievement hunter. They all popped through natural play. Ive been having a lot of fun playing mostly in co-op with friends. I hope they drop a dlc with more stories and sidequests in the future. I had no plans on becoming as invested in this game as I have. A pleasant surprise.

Switch: Still playing Persona 5 Strikers and Atelier Ryza 2. Im considering Monster Hunter Stories 2, but I think I'll wait for some performance patches first. The fps can be all over the place like Hyrule Warriors Age of Calamity is.

PS4: Got tired of staring at it so I disconnected the console and put it in the closet (F). I'll bring it back when HZD2 and GoW2 drops.

Here's my take on it. Long read alert. I've had the Playstation/Nintendo combo for as long as I can remember. Last year I couldn't get a hold of a PS5 (shocker) but was given a Series S as a surprise by my SO. Before that I never cared much about Xbox. Ironically this is actually a good thing for several reasons.
1, I haven't played any xbox exclusive games before so even though Gears, Halo and Forza are old, they are new to me. And the newer releases are superb IMO.
2, Game Pass is a stroke of genius. I have literally played more games since the Series S launched than I did for the entire last generation on PS4. I've tried games I never would have considered (due to price and or peak of interest) and been having a lot of fun with it.
More reasons why I'm very positive to this launch. I don't use smart delivery myself but I get why it's smart. I love Quick Resume! Jumping between games definitely feels Next-gen to me.
Finally, and this is where I will lose you. I don't care that Xbox doesn't have a lot of next-gen exclusive games yet. That is not a deal breaker for me. I don't care if anybody with an xbox one or ps4 for that matter gets to play some of the games I get to play at a higher frame rate or whatever. It doesn't matter to me. Nothing truly amazing will come until the devs master Unreal 5 anyways. I am very positive about the future with true next-gen games coming and I don't mind jumping in early on this generation. I've already gotten too much fun and entertainment out of my Series S than I thought would be possible.

I can't remember the last time I had so many games to be excited about and looking forward too. I'm so glad I jumped on Xbox this generation. This year alone I'm looking forward to Flight Simulator 2021, Forza Horizon 5 and Halo Infinite the most. But there are literally 20 more games coming to Xbox this year and 2022 I plan to play.
In comparison. On Nintendo I'm hyped for 4 games, Metroid Dread, Monster Hunter Stories 2, Shin Megami Tensei V and BoTW2 next year.
On Playstation it's HZD 2 and GoW 2, but they aren't coming until 2022 if I'm not mistaken.
In conclusion, Xbox is without a doubt the place to be right now and I don't see it changing soon.

Games that got my attention was:

Yakuza: Like a Dragon (I bought this a couple months ago, and seeing it come to GPU made me think 2 things, 1, I hope everybody checks it out! The game is a lot of fun! and 2. I'm never buying a game again unless it's an exclusive on another console).

DOOM Eternal is getting optimised for Xbox Series X and S this month. Been waiting for this before trying it.

Add the fact that almost all the games shown in their showcase comes straight to GPU makes this a very strong e3 for me even if I personally won't play every game they showed. There was more than enough here to keep me locked in for this year and the next.
