@k3lt0n I've only just begun, but I think a true F1 enthusiast might prefer the regular career mode maybe? It does seem like the game offers a lot of difficulty tweaking and assists to take it from arcade racer to flat-out simulation, so it's probably worth a shot!
Just started the story mode "Braking Point" (groan) on F1 2021 on Gamepass. It's a bit silly, but quite fun so far. Definitely keeps me interested in playing rather than just jumping in cold to career mode.
I picked "other" because I remember being thrilled by Need for Speed III: Hot Pursuit all the way back in 1998!
I also have a bit of a soft spot for Need for Speed: Shift. I remember the cockpit view being really dynamic with the movement as you cornered. While many games since do this routinely, I don't remember if other racers had done that before. Also, the sound effects and overall immersion made it very intense.
