360 was my first console that I played online a lot. A friend sold me his Halo 3 360 that was having some issues reading discs, which a lens cleaning disc solved (although not in the long run sadly). Also first time I was allowed to buy a M rated game (Halo 3). I still think that the controller is one of the best for racing games and FPS, even compared to a Dualsense.

As for the topic, some of the great ones have been already mentioned here, so I just want to highlight some franchises that, sadly, never returned.
Condemned, for example. I loved those games, light years from the horror/walking sims that plague the market nowadays (don't get me wrong, I like those, but there's so many of them).
Another one I am quite fond of is The Darkness. It was one of my first X360 games. I had a blast with it!
And finally, Splinter Cell: Conviction. This one may be my favorite SC. Oh, how I miss those days when Sam Fisher was a top priority for Ubisoft.
@HarmanSmith NieR is excellent. The combat is a bit janky but the story is superb. Definitely worth playing. I'd recommend the original over the recent remake if you can find a copy, especially as the original game was part of the final batch of FPS Boost titles and now runs at a solid 60fps on Series consoles.
I forgot the original NieR is BC! I saw a cheap copy recently but I skipped it, lol. At least is on the MS Marketplace, so I would give it a try eventually.
One of my old time favourites was Dragon Ball Z: Battle of Z. It's rare you find anyone online on 360, but it does keep you entertained and stuff for a long time.

Never owned a 360, but I did love Sonic '06 on the PS3.
I think Sonic '06 could have been a great game, and the jank just adds to the charm.
I bring this up here because the 360 version is apparently much better than the PS3.
And because I really wish they made it a backwards compatible title for Series X. The Xbox Series X's more powerful hardware could just brute force through '06's awful optimisation and coding.
Unofficial emulation proved that with more powerful CPUs, the loadtimes and lag were solved and the game plays much better. If '06 was made backwards compatible, it could redeem '06's reputation
