Yes the left thumbstick controls speed, forward to go faster back to slow it on down. Also down on the directional pad will change the view for dogfights, at least that's what I use. My first 5-6 times flying went spectacularly wrong! Once I changed the flight to inverted I was taking out tie fighters and a-wings with gusto.

Try inverting the flight in the settings, it certainly worked for me!
