Suggestion:
You can do this when after you signed in or when you not even signed in yet.
Do it before you signed in yet though. It won't show nothing to your friends. It'll say the last time you signed in online before.
So on your controller, press the big green "x". ( Main menu button )
Go to the right I think twice.
Click "Prefferences"
Click "Online Status"
It will say
'Online'
'Busy'
'Away'
'Offline'
Click 'Offline' & there you go !

simply click the 'X' in the center of your controller prompting the xbox guide and press the blue x button to sign out of xbox live

Go to settings/preferences. Select appear offline. Then you can play online without your friends knowing
If you press the "X" on your controller it should take you to the place where you message your friends. There is also an option that says "status" go there and change it to "online / away/ offline" etc. It is a little hard to find, but you have to press the "x" in the middle of your controller and then go to "status".
